Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1/4 cup shallots, minced
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup dry white wine
- 2 tablespoons fresh lemon juice
- 2 tablespoons capers, rinsed and drained
- 2 tablespoons unsalted butter
- 1/4 cup fresh parsley, chopped
- Lemon wedges for serving
Directions
- Season the chicken breasts with salt and pepper. Place the flour in a shallow dish and coat the chicken in the flour.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the shallots and garlic and cook for 1-2 minutes, or until softened.
- Add the chicken broth, white wine, lemon juice, and capers to the skillet and bring the mixture to a boil. Cook for 2-3 minutes, or until the sauce is reduced by half.
