Directions
- For chicken, combine vinegar, olive oil, spices and pour into a resealable gallon plastic bag. Make sure chicken is fully coated. Refrigerate 2-3 hours, or for whatever amount of time your schedule allows.
- Make rice according to package directions
- Heat olive oil in a pan. Add corn, black beans and spices. Saute and then set aside.
- Heat olive oil in another pan. Add onions, let brown. Add zucchini and black pepper and cook until it just softens.
- Start heating another pan for the chicken. Add chicken to the pan. Keep moving the chicken around the pan so it browns but doesn’t burn.
- Assemble fajitas using the rice, chicken, corn/black beans, zucchini/onions, and any additional toppings
Substitutions
- Steak would be another great protein option. To make vegetarian, these may be hearty enough with just removing the chicken, but black beans, eggplant, or tofu could work here as well.
- For a fun and summer-y twist, try zucchini instead of peppers
