Chicken and Artichoke Cups

Ingredients
- 1 chicken breast, cubed
- 1 can (about 14 oz) artichoke hearts in water (drained)
- 1 pkg (8) refrigerator dough biscuits
- dill
- olive oil
- balsamic vinegar (optional)
- black pepper
- 1/4-1/3 cup mayo
- Parmesan cheese
Directions
- Preheat oven to 350 (or whatever the can of biscuit dough states).
- Heat thin layer of olive oil in a pan and add chicken to the pan. Drizzle balsamic vinegar (optional) over the chicken and season with black pepper and dill.
- While chicken is cooking, drain 1 can of artichoke hearts and coarsely chop them. Place in a bowl and mix with mayo.
- Flip chicken when the bottom is browned, and season other side.
- When chicken is done cooking, let cool for 5 minutes and add to the artichoke mixture. Mix well, adding more mayo if needed.
- Flatten refrigerated biscuit dough in hands and press into muffin tin. Scoop chicken/artichoke mixture into each biscuit cup. Top with a generous handful of Parmesan cheese.
- Bake for 11-13 minutes, or until cups start to brown.
