With tender chicken breasts stuffed with a flavorful mixture of spinach, feta cheese, and garlic, all baked to perfection, this dish is sure to be a hit with your taste buds. Ingredients

  • ½ canned artichoke heart, drained and chopped
  • ½ cup frozen spinach, defrosted and drained
  • 4 oz cream cheese, softened
  • ½ cup shredded mozzerella cheese (2 oz)
  • ½ teaspoon salt, divided
  • ½ teaspoon pepper, divided
  • 1 teaspoon garlic powder
  • 4 boneless skinless chicken breasts (6 to 8 oz each)
  • ¼ cup butter, melted
  • 1cup plain panko crispy bread crumbs

Directions

  1. Preheat oven to 400. Line baking sheet with parchment paper.
  2. Mix cream cheese with the garlic powder, and half of the salt and pepper.
  3. Stir in artichokes and spinach.
  4. Cut a slit in each chicken breast to create a pocket. Be careful not to cut the breast through to the other side.
  5. Stuff each pocket with a quarter of the cream cheese filling. Press edges of chicken together to seal. Use a toothpick if needed.
  6. Mix the remaining salt and pepper with the bread crumbs.
  7. Dip each breast in melted butter and then bread crumbs, coating lightly.
  8. Bake 20 to 25 minutes or until chicken is no longer pink in center and thermometer reads 165 F.
