Couscous Stuffed Zucchini Boats

Ingredients

  • 3 zucchini or yellow squashes
  • 2 cups cooked couscous
  • 2 tbsp minced garlic
  • 2 tsp lemon juice
  • 2-3 tbps mixed italian seasoning (equal parts garlic powder, parsely, oregano, basil)
  • 1/3 cup Parmesan cheese
  • olive oil, as needed

Directions

  1. Halve each squash lengthwise and scrape out the centers with a spoon, forming a boat.  Slice a thin strip off the bottom of each boat so that it sits flat.  Chop the strips that were sliced off and set aside.
  2. Coat the bottom of a pan with a thin layer of olive oil.  Sauté the garlic and extra zucchini that was chopped.
  3. When the garlic is fragrant, or starts to lightly brown, add the couscous, seasonings, lemon juice, and parmesean cheese.  Let everything be fully heated (if your couscous cooled after cooking) and serve!

Substitutions

  • To add protein, this can be made with any meat or meat substitution (sausage, grilled/rotisserie chicken, ground beef, black beans)
  • Addition vegetables can be added such as grilled or roasted broccoli, squash, or cauliflower

  • honey mustard
  • non stick spray

Directions

  1. Pre-heat panini grill or prepare sandwich maker with non stick spray
  2. Layer sandwich ingredients: (bread, cheese, pear, turkey, honey mustard, bread)
  3. Spray top bread slice with non stick spray if needed
  4. Press panini maker down or plug in sandwich maker and close. Let cook for 1 or 2 minutes, until cheese is melty and bubbly.

Substitutions

  • This is incredibly customizable – use your favorite deli meat and cheese.
  • Apples would be great instead of pears.
  • This sandwich is similar to a specialty grilled cheese – if you’d prefer less cheese, use 1-2 slices of cheese and 3-4 slices of turkey instead.

  • 1 English muffin, open in halves
  • 4-6 slices of turkey
  • 2-3 slices of provolone
  • mayo
  • olive oil
  • oregano

Directions

  1. Preheat oven to 350.  Line baking sheet with parchment paper or aluminium foil, if desired (for no mess!)
  2. Lay English muffin halves on baking sheet.  Lightly spread mayo on each half.
  3. Pile 2-3 slices of turkey on each half and top with a slice of provolone, then brush olive oil on top.
  4. Sprinkle oregano on top, and put in the oven until cheese is melted and the edges start to get slightly crispy (probably about 10 minutes).  Enjoy!

  • 1/3 c ricotta
  • 2-3 oz goat cheese
  • 1.5 c frozen spinach
  • 1 onion, chopped
  • 4 slices sandwich turkey, chopped
  • 2 cloves garlic, chopped or minced
  • 6 oz pasta
  • olive oil
  • black pepper

Directions

  1. Cook pasta according to directions (no salt needed)
  2. Saute the onions in olive oil. Once soft and translucent, add the frozen spinach
  3. Saute the frozen spinach in olive oil (enough to coat bottom of pan)
  4. Once defrosted and starting to heat, add the garlic. Season with black pepper to taste.
  5. Once the spinach has cooked for about 5-10 minutes (after adding the garlic), add to the cheese mixture. Blend, add the pasta, and mix.
  6. Once warmed through, spoon onto cooked pasta and serve.

Substitutions

  • Any protein would work great in here – try adding diced ham or sausage

Ingredients

  • 8 cups water
  • 4 15.5 oz. cans of white beans, drained
  • ½ teaspoon salt
  • 1 cup chopped carrots
  • 1 cup chopped onion
  • 1 stalk celery, chopped
  • 2 teaspoons minced garlic
  • 1 teaspoon mustard powder
  • ½ tsp paprika
  • 2 bay leaves
  • 1 ham hock
  • 2 cups chopped ham
  • ½ teaspoon ground white pepper, or to taste
  • 1 tbsp olive oil

Directions

  1. In a large soup pot, saute onions, carrots, and celery in olive oil until they start to soften. Add garlic and saute for another minute.
  2. Add water, beans, garlic, mustard, paprika, and bay leaves to the pot; stir well. Add ham hock and bring to a boil; reduce heat to low and simmer for 1 hour.
  3. Remove ham hock and discard. Stir in chopped ham and simmer for 30 minutes. Season with ground white pepper to taste.

Substitutions

  • Different varieties of beans could work well here.

  • package of cooked sausage (4-5 links), cut into small pieces
  • 2 garlic cloves, minced
  • 1 onion, diced
  • 1 tsp of butter
  • black pepper to taste
  • Romano cheese

Directions

  1. Cook pasta as directed.
  2. Heat pan, add the butter and saute the sausages.
  3. After 3 or 4 minutes, add the onion and garlic, allowing the onion to get translucent.
  4. While this is cooking, defrost the peas by running them under hot water. You can use the same strainer that you will strain the pasta in.
  5. Add the pumpkin, and stir in the water, cream, black pepper.
  6. Toss the pasta with the sauce, serve warm and with the Romano cheese.

Substitutions

  • Browned ground beef could work well.
  • To make vegetarian, mushrooms could be substituted.

With just a few simple ingredients and a little bit of time, you can whip up a batch of these flavorful and filling biscuit cups that are sure to satisfy your hunger and delight your taste buds.

Ingredients

  • 14 oz dry pasta (rotini works well here)
  • 1/2 cup bread crumbs
  • 1 – 1.5 cans of black bean soup 
  • 1/2 cup of sour cream, plus some for garnish
  • .75 cup white beans, drained
  • .75 cup chopped, cooked ham
  • 2 – 2.5 tbsp butter
  • 1/2 cup cheddar cheese

Directions

  1. Preheat oven to 350 (or whatever the directions on the can of dough says)
  2. Cook the rice according to directions.
  3. Heat a medium pan over medium to low heat. Add the garlic, let heat for about 2-3 minutes, or until it starts turning slightly translucent. Then add sausage, and let cook until hot – about 5-7 minutes.
  4. Grease muffin tin. Flatten the biscuit dough in your hands, then press into the muffin tin cups.
  5. Add rice to the sausage and garlic, stir for 1-2 minutes.
  6. Spoon rice mixture into the dough cups, fill to the top. Sprinkle cheese on top of each.
  7. Bake in oven for 12-15 minutes. (don’t forget to add water to the empty muffin tin cups so they don’t burn!)

Substitutions

  • Chickencould also work well.
  • This could easily be made vegetarian by substituting black beans for sausage

  • Shredded chicken could also work well.
  • This could easily be made vegetarian by omitting the ham. Increase the white beans to 1 cup.

  3. Season with chili powder, garlic powder, sumin, salt, and black pepper. 
  4. Bring to a boil, reduce heat to low, cover and let simmer for 15-30 minutes.
  5. Serve over rice, with corn bread or chips, or over hot dogs.

Substitutions

  • Canned green chilis would be a great twist to this chili!
  • Top with sour cream, cheese, or green onions
  • To make vegetarian, add a variety of beans instead of the beef.
  • Ground pork, turkey, or chicken could work as well.
