  • 4.5 cup cooked rice
  • 2 cans tuna, drained
  • 1.5 cups peas
  • 2 cups grated cheese, divided
  • 1 can cream of celery
  • 1 cup sour cream
  • 1 cup bread crumbs
  • 5 tbps butter
  • 3 tbsp parsley

Directions

  1.  Preheat oven to 350
  2. Mix rice, tuna, peas, cream of celery soup, sour cream, and half the cheese
  3. Spread in a 9×13 baking dish
  4. Top with the rest of the cheese
  5. Melt butter and mix with bread crumbs and parsley, then top the dish with the bread crumb mixture
  6. Bake for 20-30 minutes

Substitutions

  • Canned chicken or browned sausage or ground beef can be used instead of tuna

Ingredients

  • ½ cup flour
  • 2 tablespoons olive oil
  • 1 tablespoon capers, drained
  • 2 cloves garlic, thinly sliced
  • ½ cup white wine, such as sauvignon blanc or pinot grigio 
  • ¼ cup fresh lemon juice
  • ¼ cup water
  • 3 tablespoons cold unsalted butter, cut in 1/4-inch slices
  • 1 tablespoon dried parsley

Directions

  1. Place chicken breasts between two sheets of heavy plastic, such as plastic freezer bags. Firmly pound chicken with the smooth side of a meat mallet or a heavy pan until evenly thick – about ½ an inch.
  2. Season both sides of chicken breasts with salt and black pepper; coat lightly in flour and shake off any excess.
  3. Heat olive oil in a skillet over medium heat until shimmering. 
  4. Cook the chicken until browned and cooked through, about 10 minutes, flipping half way.
  5. Transfer to plate to drain.
  6. Cook garlic and capers in reserved oil, smashing the capers lightly, until warmed through and garlic is fragrant, about 1 minute.
  7. Pour white wine into the skillet and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Cook until reduced by half, about 2 minutes.
  8. Stir lemon juice, water, and butter, cook and stir continuously until sauce starts to thicken, about 2 minutes. 
  9. Reduce heat to low and stir parsley through the sauce.
  10. Return chicken breasts to the pan and cook until warmed through, 1 to 2 minutes.

  • 1 teaspoon garlic powder
  • 4 boneless skinless chicken breasts (6 to 8 oz each)
  • ¼ cup butter, melted
  • 1cup plain panko crispy bread crumbs

Directions

  1. Preheat oven to 400. Line baking sheet with parchment paper.
  2. Mix cream cheese with the garlic powder, and half of the salt and pepper.
  3. Stir in artichokes and spinach.
  4. Cut a slit in each chicken breast to create a pocket. Be careful not to cut the breast through to the other side.
  5. Stuff each pocket with a quarter of the cream cheese filling. Press edges of chicken together to seal. Use a toothpick if needed.
  6. Mix the remaining salt and pepper with the bread crumbs.
  7. Dip each breast in melted butter and then bread crumbs, coating lightly.
  8. Bake 20 to 25 minutes or until chicken is no longer pink in center and thermometer reads 165 F.

  • 2 skinless, boneless chicken breast 
  • 1 large egg, beaten
  • ½  cup panko bread crumbs
  • ½  cup grated Parmesan cheese, divided
  • 1 tablespoons all-purpose flour
  • ½ cup olive oil for frying, or as needed
  • ½ cup marinara or spaghetti sauce
  • ¼ cup fresh mozzarella, sliced
  • 2 tablespoons italian herbs
  • 2 teaspoons olive oil
  • Garlic powder, salt, black pepper to taste

Directions

  1. Preheat an oven to 450 degrees F (230 degrees C).
  2. Place chicken breasts between two sheets of heavy plastic, such as plastic freezer bags. Firmly pound chicken with the smooth side of a meat mallet or a heavy pan until evenly thick – about ½ an inch.
  3. Season all over with salt, pepper, and garlic powder.
  4. Mix bread crumbs, 1/2 cup Parmesan cheese, and herbs  in a separate bowl, set aside.
  5. Set up three stations: shallow bowl with egg, shallow bowl with bread crumb mixture, and shall bowl with flour.
  6. Coat each chicken breast in flour, then egg. Make sure to let excess egg drip off.
  7. Transfer each breast to the bread crumb mixture, pressing crumbs into both sides. 
  8. Heat 1/2 inch olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken in the hot oil until golden, about 2 minutes per side. The chicken will finish cooking in the oven.
  9. Transfer chicken to a baking dish. Top each breast with 2 tablespoons tomato sauce, or sauce as desired. Lay mozzarella cheese on top, sprinkle remaining Parmesan over the chicken, and drizzle each with 1/2 teaspoon olive oil.
  10. Bake in the preheated oven until cheese is browned and bubbly and chicken breasts are no longer pink in the center, 15 to 20 minutes, or until 165 degrees F.

  • 1 pkg (8) refrigerator dough biscuits
  • dill
  • olive oil
  • balsamic vinegar (optional)
  • black pepper
  • 1/4-1/3 cup mayo
  • Parmesan cheese

Directions

  1. Preheat oven to 350 (or whatever the can of biscuit dough states).
  2. Heat thin layer of olive oil in a pan and add chicken to the pan. Drizzle balsamic vinegar (optional) over the chicken and season with black pepper and dill.
  3. While chicken is cooking, drain 1 can of artichoke hearts and coarsely chop them. Place in a bowl and mix with mayo.
  4. Flip chicken when the bottom is browned, and season other side.
  5. When chicken is done cooking, let cool for 5 minutes and add to the artichoke mixture. Mix well, adding more mayo if needed.
  6. Flatten refrigerated biscuit dough in hands and press into muffin tin. Scoop chicken/artichoke mixture into each biscuit cup. Top with a generous handful of Parmesan cheese.
  7. Bake for 11-13 minutes, or until cups start to brown.

  • 1 can black beans
  • rosemary and garlic to taste
  • black pepper to taste

Peppers/Onions:

  • 1 large bell pepper, sliced
  • 1 large yellow squash, sliced
  • 2 medium onions or 1 large onion, sliced
  • olive oil
  • black pepper

Fajitas:

  • chicken from above
  • corn and black beans from above
  • zucchini/onions from above
  • rice
  • sour cream, optional
  • cheddar cheese, shredded, optional

Directions

  1. For chicken, combine vinegar, olive oil, spices and pour into a resealable gallon plastic bag.  Make sure chicken is fully coated.  Refrigerate 2-3 hours, or for whatever amount of time your schedule allows.
  2. Make rice according to package directions
  3. Heat olive oil in a pan.  Add corn, black beans and spices.  Saute and then set aside.
  4. Heat olive oil in another pan.  Add onions, let brown.  Add zucchini and black pepper and cook until it just softens.
  5. Start heating another pan for the chicken.  Add chicken to the pan.   Keep moving the chicken around the pan so it browns but doesn’t burn.
  6. Assemble fajitas using the rice, chicken, corn/black beans, zucchini/onions, and any additional toppings

Substitutions

  • Steak would be another great protein option. To make vegetarian, these may be hearty enough with just removing the chicken, but black beans, eggplant, or tofu could work here as well.
  • For a fun and summer-y twist, try zucchini instead of peppers
