Low Sugar Chicken Piccata

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1/4 cup shallots, minced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup dry white wine
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons capers, rinsed and drained
  • 2 tablespoons unsalted butter
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges for serving

Directions

  1. Season the chicken breasts with salt and pepper. Place the flour in a shallow dish and coat the chicken in the flour.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, add the shallots and garlic and cook for 1-2 minutes, or until softened.
  4. Add the chicken broth, white wine, lemon juice, and capers to the skillet and bring the mixture to a boil. Cook for 2-3 minutes, or until the sauce is reduced by half.
  5. Reduce the heat to low and add the butter to the skillet. Stir until the butter is melted and the sauce is smooth.
  6. Return the chicken to the skillet and spoon the sauce over the chicken. Garnish with parsley and serve with lemon wedges.

  • 1 1/2 cup frozen spinach (more/less depending on preference)
  • 2 medium tomatoes or 3 plum tomatoes, diced
  • Seasonings if desired (black pepper, garlic powder, onion powder are good!)
  • olive oil as needed
  • Parmesan cheese as desired

Directions

 

1. Coat skillet or pan with olive oil and heat over medium heat. Once warmed, add spinach.
2. Sauté spinach until heated through.  Once defrosted, add any seasonings desired.
3. Mix spinach and mac and cheese.  When served,  top with diced tomatoes and cheese.

Substitutions

 

  • To add protein, this can be made with any meat or meat substitution (sausage, grilled/rotisserie chicken, ground beef, black beans)
  • Addition vegetables can be added such as grilled or roasted broccoli, squash, or cauliflower

Turkey Apple Quesadillas

This delicious and easy-to-make meal is a great way to use up leftover Thanksgiving turkey or rotisserie chicken. It combines the flavors of savory turkey, crisp apples, and melty cheese, all wrapped up in a warm and crispy tortilla. Whether you’re looking for a quick lunch or a casual dinner, these turkey apple quesadillas are sure to please everyone around the kitchen table.

Ingredients

  • 1 medium sized tortilla
  • 3-4 slices turkey
  • 2-3 slices cheese – monterey jack or provolone works great!  Munster is good too.
  • 2-3 tbsp goat cheese (or drunken goat cheese!!)
  • 1/2 medium apple, thinly sliced (I used fuji – slice enough for a crunch but no thicker!)
  • 1 tbsp butter

Directions

 

1. Heat tortilla in microwave for 9-12 seconds, so that it doesn’t crack when folded.

2. Spreadh goat cheese on 1/2 of the tortilla.  The goat cheese doesn’t need to coat the entire side.

3. Layer the turkey, then the apple slices, then the cheese slices and fold the tortilla.

4. Melt butter on medium heat in a skillet.

5. Once the butter is melted, place the tortilla in the pan, pressing down occasionally with a spatula.  After the side is browned (1-2 minutes), flip and repeat. Once both sides are browned, remove from pan and enjoy!

Substitutions

 

  • Change up the meat by using chicken, buffalo chicken, or even ham or roast beef! 
  • Pear would be a great substitute for apple – even peach could work 
  • Brie would be a great cheese substitute as well

Ingredients

  • 2 large potatoes, washed and diced  (Peeled, if you prefer)
  • 4 slices of bacon, cooked and roughly chopped
  • 1 medium-large onion, diced
  • 1 can Campbell’s cream of potato soup (I used the reduced fat ones)
  • 1 can Campbell’s cream of celery soup (You could use another potato, or a different creamed soup)
  • 20oz skim milk (use 2 of the empty soup cans to measure)
  • black pepper, to taste
  • parsley, to taste
  • cheddar cheese (to garnish)

Directions

 

1. Combine all ingredients except cheese in a slow cooker.  Cook on high for 3-4 hours.

2. Stir, serve, and garnish with a sprinkle of parsley and a few thin shavings of cheddar cheese.

Substitutions

  • This recipe is for a 4 quart slow cooker. If your slow cooker is significantly larger, the recipe may need to be doubled.
  • If you don’t have bacon on hand, it can be left out. Leftover ham could be substituted as well.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 6 cloves garlic, minced
  • 1 celery stalk, diced
  • 1 carrot, diced
  • 1 (28 ounce) can diced tomatoes
  • 1 (16 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Directions

 

1. Heat olive oil in large skillet. When starting to shimmer, add onion and sautee until soft and almost translucent, 5-7 minutes.

2. Add garlic, celery, and carrot and saute another 5 minutes.

3. Increase the heat to medium-high. Add the ground beef, breaking up large chunks and cooking until no longer pink, 8-10 minutes.

4. Add the rest of the ingredients over low-medium heat and let simmer until slightly thickened, 30 minutes to an hour.

5. Serve over pasta such as spaghetti or rigatoni.

Ingredients

  • 1/3 cup mayo
  • 1 large egg, beaten
  • 2 tbps yellow mustard
  • 2-3 tsp lemon juice
  • 2 cans lump crabmeat, drained (4.25oz each, drained)
  • 1 cup breadcrumbs, divided in half
  • 1/4 tsp black pepper, divided in half
  • 1/2 tsp crushed rosemary – divided
  • canola or vegetable oil – enough to coat bottom of pan at about 1/2 inch

Directions

 

1. Mix mayo, egg, mustard, lemon juice, and half the black pepper and rosemary.

2. Add crab, and half the bread crumbs – enough to thicken the mixture to form into patties.

3. Form uniform-sized patties and refrigerate for about 10 minutes.  Mix remaining bread crumbs and rosemary.

4. Heat 1/2 inch of canola oil until it sizzles when a couple bread crumbs are dropped in.  Coat patties in remaining bread crumbs, and carefully place in pan.

5. Fry until golden brown and crisp – around 3 minutes each side (may be more or less depending on heat of oil.

6. Let dry on paper towel. Serve over greens, grains, or on a bun!
