Bolognese

Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 6 cloves garlic, minced
- 1 celery stalk, diced
- 1 carrot, diced
- 1 (28 ounce) can diced tomatoes
- 1 (16 ounce) can tomato sauce
- 1 (6 ounce) can tomato paste
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Directions
1. Heat olive oil in large skillet. When starting to shimmer, add onion and sautee until soft and almost translucent, 5-7 minutes.
2. Add garlic, celery, and carrot and saute another 5 minutes.
3. Increase the heat to medium-high. Add the ground beef, breaking up large chunks and cooking until no longer pink, 8-10 minutes.
4. Add the rest of the ingredients over low-medium heat and let simmer until slightly thickened, 30 minutes to an hour.
5. Serve over pasta such as spaghetti or rigatoni.
