Chicken Piccata with Garlic

Ingredients
- ½ cup flour
- 2 tablespoons olive oil
- 1 tablespoon capers, drained
- 2 cloves garlic, thinly sliced
- ½ cup white wine, such as sauvignon blanc or pinot grigio
- ¼ cup fresh lemon juice
- ¼ cup water
- 3 tablespoons cold unsalted butter, cut in 1/4-inch slices
- 1 tablespoon dried parsley
Directions
- Place chicken breasts between two sheets of heavy plastic, such as plastic freezer bags. Firmly pound chicken with the smooth side of a meat mallet or a heavy pan until evenly thick – about ½ an inch.
- Season both sides of chicken breasts with salt and black pepper; coat lightly in flour and shake off any excess.
- Heat olive oil in a skillet over medium heat until shimmering.
- Cook the chicken until browned and cooked through, about 10 minutes, flipping half way.
- Transfer to plate to drain.
- Cook garlic and capers in reserved oil, smashing the capers lightly, until warmed through and garlic is fragrant, about 1 minute.
- Pour white wine into the skillet and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Cook until reduced by half, about 2 minutes.
- Stir lemon juice, water, and butter, cook and stir continuously until sauce starts to thicken, about 2 minutes.
- Reduce heat to low and stir parsley through the sauce.
- Return chicken breasts to the pan and cook until warmed through, 1 to 2 minutes.
