Fettuccine with Peppered Zucchini and Chicken

Ingredients
- 4.5 oz dry fettuccine
- 1 chicken breast (about 6 oz), chopped.
- 1 clove of garlic, minced
- 1 large onion, sliced
- 1 zucchini, cut in thirds and then sliced
- black pepper
- olive oil
- Parmesan cheese
Directions
- Cook pasta according to directions.
- Season chicken with salt and pepper. Pan fry until cooked through.
- Heat a large pan, lightly coat the bottom with olive oil, then saute the onion slices
- When the onions are close to being translucent, add the zucchini.
- Saute for another minute or two, and add the garlic
- Keep sauteing for another 5-7 minutes. Add a bit more olive oil so the mixture slightly shimmers
- Coat heavily with black pepper, adjust to taste.
- Add the pasta and chicken to pan, toss. Add additional olive oil as needed.
- Serve with Parmesan cheese.
Substitutions
- Shrimp would be a great substitution for the chicken. Broccoli or cauliflower could work well instead of (or addition to) the zucchini.
