Parmesan Spaghetti Squash

Ingredients
- 1 spaghetti squash
- 2-3 tbsp olive oil, plus more as needed
- black pepper to taste
- 1/3-1/2 cup Parmesan cheese
Directions

- Preheat oven to 375 degrees
- Cut squash in half and scoop out seeds
- Place squash, cut side up, on a jelly roll pan or casserole dish. Lightly coat squash with olive oil and black pepper
- Bake in oven for 40-50 minutes, or until a fork can easily pierce through the squash’s flesh (if squash starts to dry out, add a little more olive oil)
- Remove and let sit until cool enough to handle. Using a fork, srape the stringy flesh out of the squash (you can refridgerate after this step and complete later).
- Coat bottom of pan in olive oil and start to heat on medium. Add squash.
- After squash is heated through, add Parmesan cheese and black pepper and mix through. Add more black pepper or Parmesan cheese to taste. Enjoy!
