Stuffed Baked Chicken

Ingredients
- ½ canned artichoke heart, drained and chopped
- ½ cup frozen spinach, defrosted and drained
- 4 oz cream cheese, softened
- ½ cup shredded mozzerella cheese (2 oz)
- ½ teaspoon salt, divided
- ½ teaspoon pepper, divided
- 1 teaspoon garlic powder
- 4 boneless skinless chicken breasts (6 to 8 oz each)
- ¼ cup butter, melted
- 1cup plain panko crispy bread crumbs
Directions
- Preheat oven to 400. Line baking sheet with parchment paper.
- Mix cream cheese with the garlic powder, and half of the salt and pepper.
- Stir in artichokes and spinach.
- Cut a slit in each chicken breast to create a pocket. Be careful not to cut the breast through to the other side.
- Stuff each pocket with a quarter of the cream cheese filling. Press edges of chicken together to seal. Use a toothpick if needed.
- Mix the remaining salt and pepper with the bread crumbs.
- Dip each breast in melted butter and then bread crumbs, coating lightly.
- Bake 20 to 25 minutes or until chicken is no longer pink in center and thermometer reads 165 F.
